One of Core's flagship wines, the Elevation Sensation has been produced every year since 2002. This blend was co-fermented to produce a rich wine, which came from a combination of vineyards in the Central Coast region. Extended skin contact during fermentation, stem inclusion, and barrel aging are all great elements in winemaking practices. This wine was aged for 42 months in a combination of 1 year old hogsheads, and 600 and 800 liter demi-muid. The wine was bottled without fining or filtration

Bouquet | Big and flamboyant nose is full of kirsch, minerals, incense, blackberries, eucalyptus, earthy underbrush, dark bittersweet chocolate, and warm baking spices. |
Flavour | Medium to full body, moderate ripe tannins and nice acidity. This is "stacked" on the palate with layers of fruit, spice, minerals, and earthiness that slowly peal away revealing the next layer. The finish has very nice length with some eucalyptus, dark chocolate and cherries closing the show |
